Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups mushrooms, sliced (cremini or button)
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then place them skin-side down in the skillet. Sear for 5-7 minutes until the skin is golden brown.
  3. Flip the chicken thighs and add the chopped onion and sliced mushrooms to the skillet. Sauté for another 3-4 minutes until the onions are translucent.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the white wine and scrape any browned bits from the bottom of the skillet. Add the thyme and rosemary, stirring to combine.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove the skillet from the oven and stir in the butter until melted. Serve hot, spooning the mushroom mixture over the chicken.
