Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups mushrooms, sliced (such as cremini or button)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the olive oil, rosemary, thyme, smoked paprika, salt, and pepper. Add the chicken thighs and coat them well with the mixture.
  3. Heat an oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until the skin is golden brown.
  4. Flip the chicken thighs and add the sliced mushrooms and minced garlic to the skillet around the chicken.
  5. Pour in the chicken broth and lemon juice. Bring to a simmer.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let it rest for a few minutes before serving. Enjoy with the sautéed mushrooms and pan juices drizzled on top.
