Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste
  • 4 large Yukon Gold potatoes, peeled and cubed
  • 4 cloves garlic, peeled
  • 1/2 cup milk
  • 4 tablespoons butter
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, lemon zest, lemon juice, salt, and pepper.
  3. Rub the herb mixture all over the chicken thighs, ensuring even coverage.
  4. Place the chicken on a baking sheet and roast in the oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  5. While the chicken is roasting, place the potatoes and garlic cloves in a large pot, cover with water, and bring to a boil.
  6. Cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.
  7. Add milk and butter to the potatoes and garlic, then mash until smooth and creamy. Season with salt and pepper to taste.
  8. Once the chicken is done, let it rest for a few minutes, then serve alongside the garlic mashed potatoes, garnished with fresh parsley.
