Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 8 ounces green beans, trimmed
  • 8 ounces mushrooms, sliced
  • 4 large potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix olive oil, thyme, rosemary, salt, and pepper. Rub this mixture all over the chicken thighs.
  3. Place the chicken thighs on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  4. While the chicken is roasting, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.
  5. In the last 10 minutes of the chicken roasting time, add the green beans and mushrooms to the baking sheet, tossing them in the chicken drippings.
  6. Drain the potatoes and return them to the pot. Add minced garlic, milk, and butter, then mash until smooth and creamy. Season with salt and pepper to taste.
  7. Once the chicken and vegetables are done, serve the chicken alongside the green beans and mushrooms, with a generous scoop of garlic mashed potatoes.
