Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 large carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 1 pound potatoes, peeled and diced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, thyme, rosemary, salt, and pepper. Add the chicken thighs and coat well.
  3. Place the chicken on a baking sheet and roast in the oven for about 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C).
  4. While the chicken is roasting, prepare the carrots. In a skillet over medium heat, add the carrots and honey. Cook for about 10 minutes, stirring occasionally, until the carrots are tender and glazed. Season with salt and pepper to taste.
  5. For the garlic mashed potatoes, boil the diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  6. Add butter, minced garlic, and milk to the potatoes. Mash until creamy and smooth. Season with salt and pepper.
  7. Once the chicken is done, plate it alongside the honey-glazed carrots and garlic mashed potatoes. Garnish with fresh parsley before serving.
