Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 cup chicken broth

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine minced garlic, lemon zest, lemon juice, olive oil, chopped rosemary, chopped thyme, salt, and pepper to create a marinade.
  3. Pat the chicken dry with paper towels and place it in a roasting pan. Rub the marinade all over the chicken, including under the skin for more flavor.
  4. Stuff the cavity of the chicken with quartered onion.
  5. Pour chicken broth into the bottom of the roasting pan to keep the chicken moist while roasting.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.
  7. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  8. Serve with your choice of sides, drizzled with the pan juices.
