Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 ripe mango, diced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix the olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary to create a seasoning rub.
  3. Pat the chicken dry with paper towels and rub the seasoning mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is roasting, prepare the mango salsa by combining the diced mango, jalapeño, red onion, cilantro, lime juice, salt, and pepper in a bowl. Mix well and set aside.
  6. Once the chicken is done, let it rest for 10 minutes before carving.
  7. Serve the sliced chicken topped with the fresh mango salsa.
