Ingredients:

  • 4 chicken breasts
  • 2 cups baby potatoes, halved
  • 1 cup mushrooms, sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes and sliced mushrooms with 2 tablespoons of olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Spread the potato and mushroom mixture on one side of a baking sheet.
