Ingredients:

  • 1 whole rabbit, cleaned and cut into pieces
  • 4 cloves garlic, minced
  • 2 lemons (zest and juice)
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced

Instructions:

  1. In a bowl, mix together minced garlic, lemon zest, lemon juice, olive oil, rosemary, thyme, salt, and pepper.
  2. Marinate the rabbit pieces in the herb mixture for at least 1 hour, or overnight in the refrigerator for best flavor.
  3. Preheat the oven to 375°F (190°C).
