Ingredients:

  • 1 whole turkey (about 12-14 pounds)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 lemons (zested and juiced)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 2 cups low-sodium chicken broth

Instructions:

  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, rosemary, thyme, sage, salt, and pepper to create a marinade.
  3. Rinse the turkey under cold water and pat it dry with paper towels.
  4. Rub the marinade all over the turkey, including under the skin for extra flavor.
  5. Stuff the cavity of the turkey with the quartered onion.
  6. Place the turkey on a roasting rack in a large roasting pan and pour the chicken broth into the bottom of the pan.
  7. Roast the turkey in the preheated oven for about 3 to 3.5 hours, or until the internal temperature reaches 165°F (74°C).
  8. Baste the turkey with the pan juices every 30 minutes for added moisture.
  9. Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
