Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon garlic powder
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 1 tablespoon honey
  • 4 cloves garlic, crushed
  • 1 onion, quartered
  • Fresh herbs (such as thyme and rosemary) for garnish

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the olive oil, sea salt, black pepper, dried thyme, dried rosemary, and garlic powder to create a seasoning rub.
  3. Pat the chicken dry with paper towels and rub the seasoning mixture all over the chicken, including under the skin where possible.
  4. In a separate bowl, combine the lemon juice, orange juice, honey, and zests to make the citrus glaze.
  5. Place the crushed garlic and quartered onion inside the cavity of the chicken.
  6. Place the chicken on a roasting pan and brush half of the citrus glaze over the top of the chicken.
  7. Roast the chicken in the preheated oven for about 1 hour, basting with the remaining glaze halfway through.
  8. Check for doneness by ensuring the internal temperature reaches 165°F (75°C).
  9. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  10. Garnish with fresh herbs before serving.
