Ingredients:

  • 500g chicken livers
  • 1 onion, quartered
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 1 tsp thyme leaves
  • 1 tsp parsley, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard

Instructions:

  1. In a pot, combine chicken livers, quartered onion, crushed garlic, bay leaf, thyme, parsley, salt, and pepper. Cover with water and bring to a boil.
  2. Reduce heat and simmer for about 15-20 minutes, or until the livers are cooked through and tender.
  3. Remove the livers and let them cool slightly. Strain the broth and reserve for later use.
  4. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, and a pinch of salt and pepper to create the sauce.
  5. Slice the boiled chicken livers and arrange them on a serving platter. Drizzle with the lemon-garlic sauce.
  6. Garnish with additional parsley if desired and serve warm.
