Ingredients:

  • 4 large eggs
  • 1 ripe avocado
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 4 slices whole-grain bread
  • Olive oil for drizzling

Instructions:

  1. Bring a pot of water to a boil. Carefully add the eggs and boil for 9-12 minutes, depending on desired doneness.
  2. While the eggs are boiling, toast the whole-grain bread slices until golden brown.
  3. In a small bowl, mash the avocado and mix in the lemon juice, parsley, chives, salt, and pepper.
