Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup water (adjust as needed)
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 tablespoon lemon juice

Instructions:

  1. In a large bowl, mix the whole wheat flour, salt, chopped cilantro, and mint leaves.
  2. Gradually add water and knead the mixture until it forms a smooth dough. Cover and let it rest for 20 minutes.
  3. In a pan, heat olive oil over medium heat. Add cumin seeds and let them sizzle.
  4. Add the mixed vegetables, turmeric powder, garam masala, red chili powder, and salt. Sauté until the vegetables are tender. Stir in lemon juice and remove from heat.
  5. Divide the rested dough into equal portions and roll each portion into a ball.
  6. On a floured surface, roll each ball into a thin disc (chapati).
  7. Heat a tawa or skillet over medium-high heat. Cook each chapati for about 1-2 minutes on each side until brown spots appear.
  8. Once cooked, place chapatis in a clean cloth to keep warm. Serve with the spiced vegetable filling.
