Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, mix together the cream cheese, Parmesan cheese, basil, parsley, garlic, lemon zest, salt, and pepper until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by slicing it horizontally but not all the way through.
  4. Stuff each chicken breast with the cheese mixture, securing with toothpicks if necessary.
  5. Rub the outside of the chicken breasts with olive oil, paprika, salt, and pepper.
  6. Place the stuffed chicken breasts in a baking dish and cover with foil.
  7. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the juices run clear.
  8. Let rest for 5 minutes before slicing and serving.
