Ingredients:

  • 2 chicken breasts
  • 1 medium sweet potato, peeled and cubed
  • 1 small head of cauliflower, cut into florets
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sweet potato cubes and cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender and golden.
  3. While the vegetables are roasting, prepare the chicken. Season the chicken breasts with thyme, rosemary, salt, and pepper. Heat the remaining tablespoon of olive oil in a skillet over medium heat.
  4. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from heat and drizzle with lemon juice.
  5. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the spinach and cook until wilted, about 2-3 minutes.
  6. To serve, place the roasted sweet potatoes and cauliflower on a plate, top with the herbed chicken, and add a side of sautéed spinach.
