Ingredients:

  • 1 whole chicken (about 3-4 pounds)
  • 12 cups cold water
  • 2 medium onions, quartered
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, crushed
  • 1 lemon, halved
  • 1 bunch fresh parsley
  • 1 bunch fresh thyme
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • Salt to taste

Instructions:

  1. In a large stockpot, add the whole chicken and cover it with cold water.
  2. Bring the water to a boil over medium-high heat. Skim off any foam that rises to the top.
  3. Add the onions, carrots, celery, garlic, lemon halves, parsley, thyme, bay leaves, and peppercorns.
  4. Reduce the heat to low and simmer uncovered for about 4-6 hours, occasionally skimming off any impurities.
  5. Once the broth is rich and flavorful, remove the chicken and strain the broth through a fine-mesh sieve.
  6. Taste the broth and add salt as needed. Cool and store in the refrigerator or freeze for later use.
