Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup egg noodles
  • 1 cup fresh spinach or kale
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.
  3. Pour in the chicken broth and bring to a boil. Add the shredded chicken, thyme, rosemary, and bay leaf.
  4. Reduce heat and let it simmer for 15 minutes, allowing the flavors to blend.
  5. Add the egg noodles and cook according to package instructions until tender.
  6. Stir in the fresh spinach or kale and lemon juice, cooking for an additional 2-3 minutes until the greens are wilted.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
