Ingredients:

  • 8 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup milk
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
