Ingredients:

  • 2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup olive oil, plus more for drizzling
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1 head of garlic, roasted
  • Coarse sea salt, for topping

Instructions:

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Once the dough has risen, punch it down and transfer it to a greased baking sheet. Spread it out gently with your fingers to form a rectangular shape.
