Herbed Garlic Mashed Potatoes with Parmesan

Ingredients:

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt to taste
  • Black pepper to taste

Instructions:

  1. In a large pot, add the cubed potatoes and cover them with cold water. Add a generous pinch of salt and bring to a boil.
  2. Once boiling, reduce heat to medium and cook potatoes until tender, about 15-20 minutes.
  3. While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Be careful not to brown the garlic.
  4. Drain the potatoes and return them to the pot. Add the garlic butter, heavy cream, and Parmesan cheese. Mash the potatoes until smooth and creamy.
  5. Stir in the chopped parsley and chives. Season with salt and black pepper to taste.
  6. Serve warm, garnished with additional herbs if desired.
