Ingredients:

  • 2 pounds of Yukon Gold potatoes, peeled and cubed
  • 4 cloves of garlic, minced
  • 1/2 cup of milk (or cream for richness)
  • 1/4 cup of unsalted butter
  • 1/2 cup of grated Parmesan cheese
  • 1 tablespoon of fresh parsley, chopped
  • 1 tablespoon of fresh chives, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt the butter in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Drain the potatoes and return them to the pot. Add the garlic butter, milk, and Parmesan cheese.
