Ingredients:

  • 1 sheet of puff pastry, thawed
  • 200g goat cheese, softened
  • 4 fresh figs, sliced
  • 1 tablespoon honey
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 egg, for egg wash

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to smooth any creases and then cut it into 3-inch squares.
  3. Place the pastry squares on a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine the softened goat cheese, chopped thyme, rosemary, salt, and pepper until well blended.
  5. Spread a layer of the goat cheese mixture onto each pastry square, leaving a small border around the edges.
  6. Top each cheese layer with a few slices of fig.
  7. Drizzle a touch of honey over the figs for added sweetness.
  8. Brush the edges of the pastry with the beaten egg for a golden finish.
  9. Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and puffed up.
