Ingredients:

  • 1 sheet of puff pastry, thawed
  • 200g goat cheese, softened
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh thyme leaves, chopped
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • 1/2 cup fig jam
  • 1 egg, beaten (for egg wash)
  • Fresh herbs for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut into 3-inch squares.
  3. Place the pastry squares on a baking sheet lined with parchment paper.
  4. In a bowl, mix the softened goat cheese, chives, thyme, honey, salt, and pepper until well combined.
  5. Spoon a generous amount of the goat cheese mixture into the center of each pastry square.
  6. Fold the corners of the pastry over the filling to create a small tartlet, pinching the edges to seal.
  7. Brush the tops with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden.
  9. Remove from the oven and allow to cool slightly.
  10. Top each tartlet with a dollop of fig jam and garnish with fresh herbs, if desired.
