Ingredients:

  • 2 pounds baby potatoes, halved
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
