Ingredients:

  • 1 pound of Italian sausage (pork or chicken)
  • 2 medium apples, cored and sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • 1 tablespoon apple cider vinegar

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until it softens.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Remove the sausage from its casings and add it to the skillet. Cook until browned and cooked through, breaking it up with a spatula, about 8-10 minutes.
  4. Stir in the sliced apples, thyme, rosemary, salt, and pepper. Cook for another 5 minutes until the apples are tender.
  5. Add the chopped kale and apple cider vinegar to the skillet. Stir well and cook until the kale is wilted, about 3-4 minutes.
  6. Taste and adjust seasoning if needed. Serve warm.
