Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound 97% ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 3-4 minutes.
  4. Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes.
  5. Stir in the cooked quinoa, diced tomatoes, oregano, basil, salt, and pepper. Mix until well combined and heated through.
  6. Spoon the turkey and quinoa mixture into each bell pepper, packing it down slightly.
  7. Top each stuffed pepper with shredded mozzarella cheese.
  8. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and the peppers are tender.
  9. Garnish with fresh parsley before serving.
