Ingredients:

  • 1 cup almond butter
  • 2 ripe bananas, mashed
  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the almond butter, mashed bananas, eggs, Greek yogurt, honey, and vanilla extract until smooth.
  3. In another bowl, whisk together the baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. If desired, fold in dark chocolate chips for an extra treat.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
