High-Protein Beef Bowl

Ingredients:

  • 1 lb flank steak, thinly sliced
  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium beef broth
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine soy sauce, sesame oil, ginger, garlic, and rice vinegar. Add the sliced flank steak and marinate for at least 30 minutes.
  2. In a saucepan, bring water or beef broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
  3. While the quinoa cooks, heat a skillet over medium-high heat. Add the marinated beef and cook for about 3-4 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, add the bell pepper, broccoli, and carrot. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
  5. To assemble the bowls, divide the quinoa among serving bowls, top with the stir-fried vegetables and beef. Garnish with green onions and sesame seeds.
  6. Serve immediately and enjoy your high-protein beef bowl!
