Ingredients:

  • 1 cup egg whites
  • 1 1/2 cups whole oats
  • 1 cup organic blueberries
  • 1/4 cup no sugar added blueberry jam
  • 2 tablespoons organic cane sugar
  • 1/2 cup skim milk
  • 1 teaspoon pure vanilla extract
  • Canola oil spray for greasing

Instructions:

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it with canola oil spray.
  2. In a large mixing bowl, combine the egg whites, skim milk, and pure vanilla extract. Whisk until well combined.
  3. In another bowl, mix the whole oats, organic cane sugar, and organic blueberries together.
  4. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Top each muffin with a small dollop of no sugar added blueberry jam.
  7. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
