Ingredients:

  • 4 large eggs
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup shredded cheddar cheese
  • 1/2 avocado, sliced
  • 1 small tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 large whole wheat tortillas
  • Fresh salsa for serving

Instructions:

  1. In a bowl, whisk the eggs and season with salt, pepper, cumin, and smoked paprika.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the eggs and scramble until just set.
  3. In the same skillet, add black beans and cook for another minute until warmed through.
  4. Remove from heat and stir in shredded cheddar cheese until melted.
  5. Warm the tortillas in a separate skillet or microwave until pliable.
  6. To assemble, place a portion of the egg and bean mixture in the center of each tortilla.
  7. Top with avocado slices, diced tomatoes, and chopped cilantro.
  8. Fold the sides of the tortilla over the filling and roll up tightly to form a burrito.
  9. Serve with fresh salsa on the side.
