Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1/4 cup extra virgin olive oil
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture onto the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest for a few minutes before slicing.
  4. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  5. In another small bowl, whisk together lemon juice, red wine vinegar, and extra virgin olive oil. Pour this dressing over the salad and toss to combine.
  6. Top the salad with the sliced grilled chicken and garnish with fresh parsley before serving.
