Hoisin Turkey Cauliflower Stir-Fry

Ingredients:

  • 1 lb ground turkey
  • 1 medium head of cauliflower, cut into florets
  • 2 bell peppers (red and yellow), sliced
  • 3 tablespoons hoisin sauce
  • 1 cucumber, diced
  • 1 ripe mango, diced
  • 3 green onions, chopped
  • 2 cups cooked rice
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 jalapeño, seeded and minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C). Toss the cauliflower florets with 1 tablespoon of vegetable oil, salt, and pepper. Spread them on a baking sheet and roast for 20 minutes or until golden and tender.
  2. In a large skillet, heat the remaining vegetable oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Add the sliced bell peppers to the skillet and sauté for another 5 minutes until they are tender.
  4. Stir in the roasted cauliflower, hoisin sauce, honey, and brown sugar. Mix well and cook for an additional 2-3 minutes until everything is heated through.
  5. Remove from heat and fold in the diced cucumber, mango, minced jalapeño, and chopped green onions.
  6. Serve the stir-fry over cooked rice and enjoy!
