Ingredients:

  • 2 cups unsweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well combined.
  2. Press the coconut mixture into a lined 8x8 inch baking dish, smoothing it into an even layer. Refrigerate for about 30 minutes until firm.
  3. Once firm, cut the coconut mixture into bars or squares.
  4. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  5. Dip each coconut bar into the melted chocolate, ensuring it's fully coated. Place the bars on a parchment-lined tray.
