Ingredients:

  • 1 lb chicken thighs, boneless and skinless
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 cups cooked black beans (canned or pre-cooked)
  • 1 cup cooked white rice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a bowl, mix honey, minced garlic, soy sauce, cumin, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat. Remove chicken from marinade (reserve marinade) and cook for 5-7 minutes per side, or until golden brown and cooked through.
  3. Add the reserved marinade to the skillet and let it simmer for 2-3 minutes until slightly thickened.
  4. In a serving bowl, layer the cooked rice, black beans, and top with the honey garlic chicken.
  5. Garnish with fresh cilantro if desired and serve warm.
