Ingredients:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 cup fresh pineapple, diced
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch (optional for thickening)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. In a bowl, whisk together soy sauce, honey, grated ginger, minced garlic, and sesame oil to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. In a large skillet or wok, heat a little sesame oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sauté until browned and cooked through, about 5-7 minutes.
  4. Add the diced pineapple to the pan with the chicken and cook for an additional 2-3 minutes until heated through.
  5. If desired, add cornstarch to the reserved marinade and stir until smooth. Pour this mixture into the skillet and cook until the sauce thickens, about 1-2 minutes.
