Honey Ginger Pork Loin with Udon Noodles and Pak Choi

Ingredients:

  • 1 lb pork loin, sliced
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 2 tsp fresh ginger, grated
  • 1-2 fresh chillies, sliced
  • 2 cups pak choi, chopped
  • 8 oz udon noodles
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

Instructions:

  1. In a bowl, whisk together honey, soy sauce, rice vinegar, fish sauce, sesame oil, and grated ginger. Add the sliced pork loin and marinate for at least 30 minutes.
  2. Cook the udon noodles according to package instructions, drain, and set aside.
  3. In a large skillet over medium heat, add a little sesame oil and sauté the marinated pork loin until cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add a bit more sesame oil and sauté the pak choi and sliced chillies until just wilted, about 3-4 minutes.
  5. Add the cooked udon noodles and the pork back to the skillet, tossing to combine and heat through. Season with salt and pepper to taste.
  6. Serve hot, garnished with sesame seeds.
