Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup honey
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper and place them skin-side down in the skillet.
  4. Sear the chicken for about 5-7 minutes until the skin is golden brown. Flip the chicken over.
  5. Pour the honey lemon mixture over the chicken in the skillet.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let rest for a few minutes before serving.
  8. Garnish with lemon slices and additional thyme if desired.
