  • 1 cup sweet corn, drained
  • 2 chicken breasts, boneless and skinless
  • 1/2 cup lychee, peeled and diced
  • 1/4 cup honey
  • 1/2 cup shredded cheese (such as mozzarella or cheddar)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced

Instructions:

  1. In a bowl, combine honey, diced lychee, soy sauce, garlic powder, ginger, salt, and pepper to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes in the refrigerator.
  3. While the chicken is marinating, prepare the sweet corn rice by mixing the cooked rice and drained sweet corn in a large bowl. Season with salt and pepper to taste.
  4. Heat olive oil in a skillet over medium heat. Remove chicken from the marinade, reserving the marinade, and cook the chicken for about 6-7 minutes on each side, or until cooked through.

  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
