Ingredients:

  • 4 corn tortillas
  • 4 large eggs
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1-2 jalapeño peppers, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish
  • Avocado slices for serving
  • Lime wedges for serving

Instructions:

  1. In a skillet over medium heat, warm the corn tortillas until they are pliable, about 30 seconds per side. Set aside.
  2. In the same skillet, add a little oil if necessary, and sauté the onion and bell pepper until softened, about 3-4 minutes.
  3. Add the garlic, jalapeño, cumin, chili powder, and salt. Cook for another 2 minutes until fragrant.
  4. Stir in the diced tomatoes and simmer for about 5 minutes until the sauce thickens slightly.
  5. In a separate skillet, fry the eggs sunny-side up to your desired doneness.
  6. To assemble, place a warm tortilla on a plate, top with a generous spoonful of the tomato-chili sauce, and then add a fried egg on top.
  7. Garnish with fresh cilantro, and serve with avocado slices and lime wedges on the side.
