Indian Besan Bread Omelette

Ingredients:

  • 1 cup besan flour
  • 2 large eggs
  • 2 slices of bread (whole wheat or white)
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1-2 green chilies, finely chopped
  • 2 tablespoons oil

Instructions:

  1. In a bowl, whisk together the besan flour, eggs, salt, chili powder, and chopped green chilies until smooth.
  2. Add the chopped onions to the mixture and stir to combine.
  3. Heat 1 tablespoon of oil in a non-stick skillet over medium heat.
  4. Pour half of the besan mixture into the skillet, spreading it evenly.
  5. Place one slice of bread on top of the mixture, pressing down slightly.
  6. After 2-3 minutes, carefully flip the omelette and cook on the other side for another 2-3 minutes until golden brown.
  7. Repeat the process with the remaining mixture and bread slice, adding more oil if necessary.
  8. Once cooked, slice the omelettes into wedges and serve hot.
