Ingredients:

  • 4 corn tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 pound Italian sausage, casings removed
  • 2 cups fresh spinach, roughly chopped
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.
  2. Add the sliced mushrooms to the skillet and sauté for another 3-4 minutes, until they soften.
  3. Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with garlic powder, salt, and pepper. Remove from heat.
  4. In another skillet, place one corn tortilla over medium heat. Sprinkle 1/4 cup of mozzarella cheese on one half of the tortilla.
  5. Spoon a portion of the sausage and spinach mixture over the cheese, then fold the tortilla in half.
  6. Cook until the bottom is golden brown and the cheese is melted, about 2-3 minutes. Flip and cook the other side until golden.
  7. Repeat with remaining tortillas and filling. Cut into wedges and serve warm.
