Ingredients:

  • 4 thin sliced chicken breasts
  • 1 pound Brussels sprouts, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and half of the Italian spices (oregano, basil, garlic powder, and red pepper flakes). Spread them on a baking sheet in a single layer.
  3. In the same bowl, season the chicken breasts with the remaining Italian spices and a little salt and pepper.
  4. Place the chicken breasts on another baking sheet or on the same sheet, if there's space, and roast both the chicken and Brussels sprouts in the oven for 20-25 minutes, or until the chicken is cooked through and the Brussels sprouts are tender and slightly caramelized.
  5. While the chicken and Brussels sprouts are roasting, prepare the Greek yogurt sauce by mixing the Greek yogurt, lemon juice, and a pinch of salt in a small bowl.
  6. Once cooked, remove the chicken and Brussels sprouts from the oven. Let the chicken rest for a few minutes before slicing.
  7. Serve the sliced chicken on a plate with Brussels sprouts on the side, drizzled with the Greek yogurt sauce, and sprinkle with fresh parsley for garnish.
