Ingredients:

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 8 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup small pasta (like acini di pepe or orzo)
  • 4 cups fresh spinach or escarole
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions:

  1. In a large bowl, combine the ground beef, ground pork, Parmesan cheese, breadcrumbs, parsley, egg, minced garlic, salt, and pepper. Mix well and form into small meatballs, about 1 inch in diameter.
  2. In a large pot, bring the chicken broth to a simmer over medium heat. Add the diced carrots and celery, and cook for about 5 minutes until slightly tender.
  3. Carefully add the meatballs to the pot and cook for another 10-15 minutes, until they are cooked through.
  4. Stir in the small pasta and cook according to package instructions until al dente.
  5. Add the fresh spinach or escarole, dried oregano, and crushed red pepper flakes (if using). Cook for an additional 2-3 minutes until the greens are wilted.
  6. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with additional Parmesan cheese if desired.
