Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup fresh jalapeños, diced (seeds removed for less heat)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup unsalted butter, softened
  • 1/4 cup honey

Instructions:

  1. Preheat your oven to 400°F (200°C) and grease a 9-inch square baking pan.
  2. In a large bowl, mix together the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the diced jalapeños and shredded cheddar cheese.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. While the cornbread is baking, prepare the honey butter by combining the softened butter and honey in a small bowl until smooth.
