Ingredients:

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1 tablespoon matcha green tea powder
  • 1/2 cup water
  • Cornstarch for dusting
  • 1/4 cup red bean paste (anko) or your favorite filling (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. In a mixing bowl, combine sweet rice flour, sugar, and matcha green tea powder.
  2. Gradually add water, stirring until the mixture is smooth and free of lumps.
  3. If desired, add vanilla extract for extra flavor.
  4. Transfer the mixture to a microwave-safe dish and cover with plastic wrap, leaving a small vent for steam.
  5. Microwave on high for 1 minute, then stir the mixture. Repeat this process for a total of 3-4 minutes until the dough is thick and slightly translucent.
  6. Dust a clean surface with cornstarch and pour the mochi dough onto it. Allow it to cool slightly.
  7. Once cool enough to handle, knead the dough gently to make it smooth. Divide into small portions (about 1-2 tablespoons each).
  8. If using, flatten each portion and place a small amount of red bean paste in the center. Fold the edges over to seal and shape into a ball.
  9. Dust the finished mochi bites with more cornstarch to prevent sticking.
  10. Serve immediately or store in an airtight container for up to 2 days.
