Ingredients:

  • 2 cups glutinous rice
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the rice and steam it in a bamboo steamer or a rice cooker for about 30-40 minutes until fully cooked and sticky.
  3. Once cooked, transfer the rice to a large bowl and let it cool slightly. Add soy sauce, sugar, and salt, mixing well until the rice is evenly coated.
  4. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Wet your hands and take small portions of the rice mixture, shaping them into flat discs about 1/4 inch thick. Place them on the prepared baking sheet.
  6. If using, sprinkle sesame seeds on top of each disc.
  7. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the crackers are golden brown and crispy.
  8. Let the crackers cool completely on a wire rack before serving.
