Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, roasted
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. In a large bowl, combine jerk seasoning, olive oil, and lime juice. Add the chicken thighs and coat well. Marinate for at least 1 hour, preferably overnight.
  2. Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
  3. While the chicken is baking, place the cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Add the roasted garlic, milk, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
  5. Once the chicken is done, let it rest for a few minutes before serving. Plate the jerk chicken alongside a generous scoop of garlic mashed potatoes.
  6. Garnish with chopped green onions and serve hot.
