Ingredients:

  • 2 cups long-grain rice
  • 1 lb chicken thighs, skinless and boneless
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 bay leaf
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 ripe pears, sliced
  • 4 cups mixed greens (spinach, arugula, or lettuce)
  • 1/4 cup walnuts, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

Instructions:

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in diced tomatoes and tomato paste, then add thyme, curry powder, paprika, bay leaf, salt, and pepper. Cook for about 5 minutes, allowing the flavors to meld.
  4. Add the rice to the pot, stirring to coat it in the tomato mixture. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. While the rice is cooking, season the chicken thighs with salt and pepper. In a separate pan, heat a little oil and cook the chicken over medium heat until golden brown and cooked through, approximately 6-7 minutes per side. Once cooked, let it rest before slicing.
  7. For the salad, in a bowl, combine mixed greens, sliced pears, and chopped walnuts. Drizzle with balsamic vinegar and olive oil, then toss gently.
  8. Serve the Jollof rice topped with sliced chicken and a side of the pear salad. Enjoy!
