Ingredients:

  • 4 slices whole grain bread
  • 1 cup kale, finely chopped
  • 1 medium carrot, grated
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 medium tomato, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped kale and grated carrot, sautéing for about 5 minutes until softened. Season with salt and pepper.
  3. Arrange the slices of bread on a baking sheet and top each slice with the sautéed kale and carrot mixture.
  4. Sprinkle shredded cheese generously over the top of each toast.
